CHRISTMAS PAVOLVA MACARONS

Makes 30

Macarons
300g almond flour
300g pure icing sugar (without corn flour added to it)
110g liquefied egg whites (see below)
300g caster sugar
75g water
110g liquefied egg whites
freeze dried raspberries

Kiwi Jam
7 kiwis
1 cup sugar
50g pectin

Frosting
1 batch Swiss meringue buttercream frosting
3 tsp passionfruit essence
2 tbsp lemon juice
3 drops yellow food gel
